What’s Cooking with Julie: Turkey lettuce wraps

This recipe is delicious, healthy and very easy to make. You will want to make extra, because these are really popular. Instead of a tortilla or bread, a crispy lettuce leaf is used to hold the filling.
turkey-wrapIngredients for filling:
12-ounce package of ground turkey
2 tablespoons of olive oil
4 green onions chopped
2 garlic cloves chopped
6-ounce can of water chestnuts, chopped
1 tablespoon of brown sugar
2 tablespoons of rice wine vinegar
1/4 cup of soy sauce
Dash of salt and pepper

Ingredients for sauce:
2 tablespoons of rice wine vinegar
2 tablespoons freshly grated ginger (if you can’t find fresh ginger, substitute 1 tablespoon ground ginger)
1/4 cup Hoisin sauce
1 tablespoon of Sriracha or other hot sauce if desired

Toppings:
2 freshly grated carrots
2 green onions, sliced thin
Large handful of bean sprouts
Chopped cilantro, if you wish
8 to 10 large iceberg or butter lettuce leaves, washed and dried off

Brown the ground turkey in the oil in a skillet. Add the remaining filling ingredients and cook a few minutes. Set aside.
Mix the sauce ingredients. At this point you can add the sauce to the filling.

Place the turkey filling on a crisp lettuce leaf and add the toppings. Eat up!

Serves about four.
